Four Seasons Hotel Prague Features Fresh Delicacies Prepared and Served in Traditional Style

 

Executive Chef Andrea Accordi brings a Tuscan summer to Prague with a special seasonal menu at the Michelin-star Allegro at Four Seasons Hotel Prague beginning June 28, 2010 and continuing throughout the season.

 

 

“Under the Tuscan Sun” features traditional ingredients of Italy’s sunny Tuscany region in dishes such as Pappa Al Pomodoro, a warm tomato soup with bread and basil, and Homemade Tortelli, stuffed with potato and Cinta pancetta. Also on the menu is a light Artichoke and Herb Soufflé with stuffed anchovies with Baccala and Fossa Pecorino cheese sauce; the summer-fresh Grilled Prawn Skewer on Panzanella with tomato sorbet and cucumber sauce; and Ricotta and Spinach Gniudi with butter and sage, zucchini blossom, pesto and Parmesan cheese sauce. Two people dining together can share a special treat: Roasted Pork Loin, skewered with Colonnata lard, summer vegetables and fruit casserole. Tuscan desserts are also on the menu.

 

Also this July and August, children under eight are invited to dine on a complimentary basis when joining their families at Allegro. Chef Accordi has prepared a special “Grow Up Healthy” menu that includes Carrot Salad with raisins; 'Madagascar' Vegetable Crudite; 'Pinocchio' Rice with young vegetables; homemade pasta with butter and Parmesan cheese or tomato sauce; mashed potato whipped with extra virgin olive oil; and Crepes with jam and soya milk ice cream sweetened with wild honey for dessert. Gluten-free bakery items are available upon request.
